Summer in a bowl! This avocado salsa is tasty & fresh, with sweetness coming from fresh fruit, creaminess from avocado, fragrance from mint & zesty bite from lime juice. It is a great accompaniment to salads & with burgers & falafels.
It’s vibrant colours mean that it is always a hit at parties esp. barbeques. Needless to say, this salsa is packed with nutrients.
Preparation time: 10 mins
Makes: 1 medium bowlful
Ingredients:
2 medium avocados, peeled & diced
1 medium red onion, chopped finely
1 mango, diced finely
150g strawberries, sliced
60g pomegranate seeds (approx 1/3 pomegranate)
60g blueberries
2 tbsp lime juice
8g fresh mint, finely chopped
Large pinch of salt
Ground black pepper
Method:
In a medium bowl, mix together all ingredients except the avocado (which can get a bit mushy).
Season with salt & pepper. Then fold in the avocado chunks.
Serve. Easy!
Variation:
Substitute fresh coriander for fresh mint
Sprinkle with some ground flaxseed, sunflower seeds & pumpkin seeds to add to the nutritive content
